Enjoy this delicious convenience store confection…at home

Who hasn’t tried a frozen, liquid icy confection from a convenience store on a hot summer day? You can make a granita from just about any fresh fruit, but this one uses my seasonal favorite, watermelon.

A granita is made with fruit, juices, purees and sugar, and sometimes other natural flavors, making it close to sorbet. The difference comes from the texture of being hand made…and that means you can create your own unique refreshing treat in the kitchen.

In this case, I'm using my favorite seasonal fruit, watermelon!

Watermelon Granita

Ingredients

  • ⅓ to ½ fresh watermelon, rind removed, sliced, and cut into cubes
  • ½ cup sugar
  • 1 slice of lime, squeezed

Instructions

  • Place all ingredients in a blender.
  • Give everything a whirl for about 30 to 60 seconds.
  • Pour the mixture into a baking pan.
  • Lay flat inside a freezer for a minimum of 4 hours or freeze overnight.
  • The next day, take a fork and scrape the entire frozen mixture.
  • Return ice flakes to the pan and freeze again for a few hours.
  • Remove from the freezer and scrape again.
  • Repeat this a third time for the best results.
  • Spoon the granita in small, clear pretty glassware.
  • Serve immediately.
